According to our philosophy, great wine is made in the vineyard, not in the cellar. Moreover, it is not the winemaker, nor the oenologist, who creates the wine. Why should they? Nature itself does that, and much better, if given the chance. So our job is limited to guiding the natural fermentation process, in which we therefore wish to intervene as little as possible. However, this does not mean that we do not attach any importance at all to how things proceed after picking. Because, even if it is not made in the cellar, it is still important to preserve, and certainly not lose, the quality obtained in the vineyard during the process.
